Yummy! Earthy, Healthy, Worthy Mushrooms

Mushrooms are touted for their disease-fighting properties, which may help manage cancer, heart disease, high blood pressure, and high cholesterol. They are high in riboflavin, niacin, and vitamin B6 which may help to lessen depression and heart disease.  A compound called eritadenine found in shiitakes may lower cholesterol by promoting cholesterol excretion. Mushrooms also contain selenium an antioxidant mineral that is thought to protect against cancer and macular degeneration.  Here is a quick and easy 15-minute garlic butter mushroom sautéed recipe that you can serve with any dinner.

 

Garlic Butter Mushrooms (serves 4)

1 Tbsp Minced Garlic

1 lb White or Mixed Mushrooms, fresh sliced

3 Tbsp of Butter

1 Tbsp of Avocado oil

1 Tbsp Fresh Thyme

1 Tbsp Fresh Parsley

 

Add the first four ingredients into a sauté pan and cook over medium-high heat until slightly browned.  Reduce heat.  Add the thyme and parsley and cook for another minute then serve.  Bon appétit!
